Zuchini Sushi

Ingredients –

1 medium green Zuchini, Sliced vertically

1 medium yellow Zuchini, sliced vertically.

1 cup grated / crumbled panner / feta cheese.

2 Tbsp Basil pesto.

1 cup finely chopped vegs (3 colour Bell peppers, onions )

1 Tbsp finely chopped Basil leaves. Salt & pepper pdr – as per taste.

olive oil – for grilling

Method –

1. Heat olive oil in a non-stick grill pan.

2. Place Zucchini slices on it.

3. Sprinkle pepper powder & Salt on top.

4. Grill till they become tender or Microwave them.

5. Combine grated panner, chopped mixed vegs, Basil leaves, salt & pepper pdr Mix properly with light hands.

6. Place grilled Zuchini slices on the worktop

7. Spread 1 tsp pesto sauce & put a 1 spoon full of paneer filling at one end & roll gently.

Can use a toothpick to seal the rolls garnish with chopped coriander leaves.
