Zucchini Zoodles

Ingredients

  • Zuchini (medium) – 1
  • Olive oil – 1/2 tsp
  • Onion (medium)- ½
  • Tomato pulp – 1k
  • Garlic
  • Chilli powder
  • Oregano
  • Salt
  • Corn flour – 1 tsp
  • Water – 1 tbsp
  • Milk – 2 tsp
  • Mix vegetables (3 color bell pepper, baby-corn, cabbage, French beans) – 1.5 cup
  • Basil leaves to garnish

Method

  1. Make Zoodles using the spiralizer (follow the spiralizer directions)
  2. Saute your zoodles in a sauce pan using little olive oil over medium heat.
  3. Cook for 4-6 mins.
  4. Keep aside.

For Sauce:

  1. Heat olive oil; add garlic & onion & sauté for 2mins.
  2. Add tomato pulp, chili powder, salt & cook for 3mins.
  3. Add corn flour, water, milk.
  4. Cook for 1min.
  5. Keep it aside.
  6. Sauté veg with oregano & chili flakes.
  7. Add Zoodles, tomato pulp & salt. Mix well.
  8. Cook for 2 mins.
  9. Garnish with finely chopped basil.
