Zucchini Lasagne

Ingredients

  • Zucchini (medium size) – 1
  • Tomato (big, chopped) – 1
  • Baby corn (sliced) –  4
  • Broccoli/Cauliflower –  ½ cup
  • French beans – ¼ cup
  • Capsicum (all 3 colours) – 1 cup
  • Olives
  • Jalapenos as required
  • Oil – 1/2 tsp

For the Sauce:

  • 1 cup milk (low fat)
  • Wheat flour/Soya flour – 1 tbsp
  • Salt
  • Pepper & Oregano as per taste

Method

  1. Preheat the oven to 1800 C
  2. Cut zucchini length wise into 4-6 slices.
  3. 2-3 slices in a baking tray.
  4. Sprinkle some pizza masala on it. Keep aside.
  5. Boil the veg till slightly soft.
  6. For the sauce-mix 1 tbsp wheat flour/Soya flour & milk.
  7. Blend it properly to avoid lumps.
  8. Heat on low flame to form a thick sauce.
  9. Add salt, Oregano & pepper powder.
  10. Heat oil, sauté garlic & tomatoes for few min.
  11. Cool & blend to a puree.
  12. Add this puree, olives, jalapenos and boiled veg to the white sauce, mix well.
  13. Spread half of this mixture evenly on the 2-3 slices, top them with remaining 2-3 slices and add the remaining mixture & bake for 5 mins.
