Ingredients
- Zucchini (medium size) – 1
- Tomato (big, chopped) – 1
- Baby corn (sliced) – 4
- Broccoli/Cauliflower – ½ cup
- French beans – ¼ cup
- Capsicum (all 3 colours) – 1 cup
- Olives
- Jalapenos as required
- Oil – 1/2 tsp
For the Sauce:
- 1 cup milk (low fat)
- Wheat flour/Soya flour – 1 tbsp
- Salt
- Pepper & Oregano as per taste
Method
- Preheat the oven to 1800 C
- Cut zucchini length wise into 4-6 slices.
- 2-3 slices in a baking tray.
- Sprinkle some pizza masala on it. Keep aside.
- Boil the veg till slightly soft.
- For the sauce-mix 1 tbsp wheat flour/Soya flour & milk.
- Blend it properly to avoid lumps.
- Heat on low flame to form a thick sauce.
- Add salt, Oregano & pepper powder.
- Heat oil, sauté garlic & tomatoes for few min.
- Cool & blend to a puree.
- Add this puree, olives, jalapenos and boiled veg to the white sauce, mix well.
- Spread half of this mixture evenly on the 2-3 slices, top them with remaining 2-3 slices and add the remaining mixture & bake for 5 mins.
