Zucchini Avocado Pesto Pasta

Ingredients

  • 1 small Zucchini, ends trimmed and make Zuchini noodles using the spiral peeler
  • 1/2k Avocado deskinned
  • 1/2k Cucumber, chopped
  • Juice of 1/2 a Lemon
  • 1 Clove garlic
  • 1 tablespoons Almond or Coconut milk
  • About 8 leaves of Basil
  • Salt & Pepper
  • Halved cherry Tomatoes & Basil leaves for garnish

Method

  • Place Zucchini spirals in a large bowl
  • For Avocado sauce, combine the remaining ingredients and grind to a smooth paste
  • Toss the Zucchini with the Avocado sauce until fully coated
  • Garnish with Cherry, Tomatoes and Basil leaves, season with more salt & pepper if needed.
