Thandai Phirni

Ingredients-

 For Thandai powder

  • Melon seeds- 1tsp
  • Cardamom- 2
  • Fennel seeds- ½ tsp
  • Pepper corns- 2-3
  • Saffron strands- 1 pinch
  • Almonds- 4-5
  • Cashew- 1-2
  • Pistachio- 2-3
  • Rose petals dried- 1tsp

Other ingredients-

  • Milk- 1cup
  • Rice- 2 tbsp (Washed & Soaked for 30-45 mins)
  • Sugar- 2tsp

Method- 

  1. Start with washing and soaking the rice for about 30-45 mins.
  2. Mix all the dry ingredients and blend them for the thandai powder. Set aside for later use.
  3. In a saucepan add 1cup milk. Bring it to boil.
  4. Add washed & soaked rice, prepared thandai powder & 2tsp sugar into it.
  5. Keep stirring till it thickens.
  6. Set in a phirni bowl and allow it to cool completely. Refrigerate for 2-3 hrs and serve.
