Thai Soup

Ingredients

  • Green peas- 1/2 K
  • Mushrooms- 1/2 k (Optional)
  • Cabbage & capsicum (chopped)- 1K
  • Lemon grass (sliced) – 1 tbsp
  • Kaffir lime leaves – 1 tsp
  • Fresh red chillies (sliced) – 1
  • Fresh coriander leaves (finely chopped) – 1 tbsp
  • Red curry paste – 1 tsp
  • Lemon juice- 1 tsp
  • Salt- as per taste
  • Oil – 1/2 tsp

Method

  1. Heat oil in a pan; Add peas, straw mushrooms, lemon grass and saute for 1 minute.
  2. Add Kaffir lime leaves, red curry paste and stir well.
  3. Add four cups of water and mix again for 1-2 minutes.
  4. Once the water starts boiling add cabbage, red chilies and salt.
  5. Cook for another 2-3 minutes.
  6. Remove from heat and add lemon juice.
  7. Pour it in a bowl, garnish with coriander and serve hot.
