Mango Thai Salad

Ingredients

  • Mango-  1
  • Shallot- (small onion) – 1
  • Roasted peanuts- 1tsp
  • Lettuce- 1 cup
  • Arugula leaves- 1 cup

For the dressing

  • Ripe red bird’s eye chili- 2
  • Ginger- ½ inch
  • Honey- 1tsp
  • Soya sauce- 1 tsp
  • Coriander leaves- ½ tbsp
  • Salt- as required

Method

  • Firstly wash and peel off the skin of the mango.
  • Using a zigzag peeler or julienne slicer, shred the mango into strips.
  • Do not grate it in a grater as it will make the mango soft.
  • Peel and chop the onion.
  • Roughly chop the lettuce and arugula leaves.
  • Grind red chili, ginger, honey, soya sauce and coriander leaves.
  • Add a little water if required. If you want it less spicy, slit and remove some seeds of the chili before grinding.
  • In a mixing bowl, mix all these ingredients gently and serve
