Ingredients
- Mango- 1
- Shallot- (small onion) – 1
- Roasted peanuts- 1tsp
- Lettuce- 1 cup
- Arugula leaves- 1 cup
For the dressing
- Ripe red bird’s eye chili- 2
- Ginger- ½ inch
- Honey- 1tsp
- Soya sauce- 1 tsp
- Coriander leaves- ½ tbsp
- Salt- as required
Method
- Firstly wash and peel off the skin of the mango.
- Using a zigzag peeler or julienne slicer, shred the mango into strips.
- Do not grate it in a grater as it will make the mango soft.
- Peel and chop the onion.
- Roughly chop the lettuce and arugula leaves.
- Grind red chili, ginger, honey, soya sauce and coriander leaves.
- Add a little water if required. If you want it less spicy, slit and remove some seeds of the chili before grinding.
- In a mixing bowl, mix all these ingredients gently and serve
