Thai Curry Noodle Soup

Ingredients

  • Oil – ½ tsp
  • Boiled noodles – 1/3cup
  • Ginger garlic paste – 1 tsp
  • Thai green curry paste – 1 tsp
  • Mix chopped veges (broccoli, zucchini, bell peppers) – 1 cup
  • Lime juice and salt – as per taste
  • Chopped basil leaves – 2 to 3

Method

  1. Heat oil in a pan.
  2. Add ginger garlic paste sauté for a min.
  3. Then add bell peppers and zucchini.
  4. Sauté till tender then add Thai green curry paste and sauté for a min.
  5. Add boiled broccoli & 1 cup water, basil leaves & boiled noodles.
  6. Boil for a min.
  7. Stir in lime juice & salt as per taste.
  8. Serve hot.
