Ingredients
- Bulgur – 1 1/2 tbsp (raw)
- Capsicum, cucumber, spring onion – 1 cup
- Parsley chopped – 2 tbsp
- Lemon juice – 1 tsp
- Garlic flavoured olive oil – ½ tsp
- White pepper powder
- Salt – to taste
Method
- Place the bulgur wheat in a heat proof bowl and pour one cup of boiling water over it.
- Set aside until the bulgur absorbs the water and becomes tender.
- In a bowl mix together cucumber, spring onion, parsley, lemon juice, oil, salt and white pepper powder.
- Add the bulgur wheat and mix well. Serve cold.
