Taboulleh

Ingredients

  • Bulgur – 1 1/2 tbsp (raw)
  • Capsicum, cucumber, spring onion – 1 cup
  • Parsley chopped – 2 tbsp
  • Lemon juice – 1 tsp
  • Garlic flavoured olive oil – ½ tsp
  • White pepper powder
  • Salt – to taste

Method

  1. Place the bulgur wheat in a heat proof bowl and pour one cup of boiling water over it.
  2. Set aside until the bulgur absorbs the water and becomes tender.
  3. In a bowl mix together cucumber, spring onion, parsley, lemon juice, oil, salt and white pepper powder.
  4. Add the bulgur wheat and mix well. Serve cold.
