Ingredients
- 1½ cup finely chopped mixed vegetables(French beans, carrots, zucchini, broccoli)
- Corn flr ½ – 1tsp
- ¼ cup moong sprouts
- 1/3 cup raw/cooked noodles
- 1 tsp garlic (finely chopped)
- 1 tsp ginger (finely chopped)
- 2 small green chillies (finely chopped)
- 1-2 Kashmiri chillies (whole)
- 1 tsp celery or 1 tbsp fresh coriander (finely chopped)
- 1 tsp oil
- 1 tsp vinegar/ lemon
- ½ tsp soya sauce
- ¼ tsp pepper
- Salt to taste
Method
- Boil the noodles and keep aside. Heat the oil in a pan and sauté Kashmiri chillies, garlic, ginger and green chillies for 1 minute.
- Add the vegetables and sprouts and sauté for another minute.
- Cook till the vegetables are tender but not overcooked.
- Add 3 cups of water along with all other ingredients except celery.
- Prepare a corn flour paste using ¾ cup of water and add this to the vegetables.
- Keep stirring well for about 5 minutes, to allow proper mixing of corn flour.
- Add the noodles and bring the stew to a boil and allow to simmer for about 15 minutes or until the vegetables are done.
- Once done, add celery, salt and pepper to the stew and serve hot.
