Quinoa Rajma Salad Bowl

Ingredients

  • Cooked quinoa -1/2 k
  • Boiled rajma/chickpeas-1/3 k
  • Onions chopped – ½ k
  • Chopped 3 colour bell peppers-1 k
  • Cucumber dice- ½ k
  • Garlic clove minced-1 no
  • Olives chopped-1 tbsp
  • Coriander leave- chopped-1 tbsp
  • Paprika – 1 tsp
  • Cumin powder – a pinch
  • Oil-1/2 tsp

Method

  1. For dressing: Combine oil, garlic, paprika ,olives, onion together & set aside.
  2. In a bowl add quinoa & top with rajma/chickpeas, cucumber & peppers.
  3. Add dressing over salad & toss well.
  4. Garnish with fresh coriander & serve.
