Ingredients
- Cooked quinoa -1/2 k
- Boiled rajma/chickpeas-1/3 k
- Onions chopped – ½ k
- Chopped 3 colour bell peppers-1 k
- Cucumber dice- ½ k
- Garlic clove minced-1 no
- Olives chopped-1 tbsp
- Coriander leave- chopped-1 tbsp
- Paprika – 1 tsp
- Cumin powder – a pinch
- Oil-1/2 tsp
Method
- For dressing: Combine oil, garlic, paprika ,olives, onion together & set aside.
- In a bowl add quinoa & top with rajma/chickpeas, cucumber & peppers.
- Add dressing over salad & toss well.
- Garnish with fresh coriander & serve.
