Ingredients
- Chopped green
- Yellow peppers-3/4k
- Chopped zucchini-1/2kg, Chopped onion-1/2k
- Aubergine (Brinjal) – 1 whole
- Garlic cloves minced – 1
- Water – 1/2L
- Uncooked quinoa – 1/4k
- Diced tomatoes – 1/2kg
- Olive oil – ½ tsp
- Salt to taste
Method
- Pressure cook the quinoa for 1 whistle.
- Add oil to the pan, add bell peppers, zucchini, onion, brinjal or aubergine and garlic saute.
- Add 1/2 cup water & remaining ingredients & bring to a boil.
- Reduce heat & simmer for 20 minutes.
- Pressure cook the quinoa, mix with the other ingredients & serve hot.
