Quinoa and Roasted Pepper Chilli

Ingredients

  • Chopped green
  • Yellow peppers-3/4k
  • Chopped zucchini-1/2kg, Chopped onion-1/2k
  • Aubergine (Brinjal) – 1 whole
  • Garlic cloves minced – 1
  • Water – 1/2L
  • Uncooked quinoa – 1/4k
  • Diced tomatoes – 1/2kg
  • Olive oil – ½ tsp
  • Salt to taste

Method

  1. Pressure cook the quinoa for 1 whistle.
  2. Add oil to the pan, add bell peppers, zucchini, onion, brinjal or aubergine and garlic saute.
  3. Add 1/2 cup water & remaining ingredients & bring to a boil.
  4. Reduce heat & simmer for 20 minutes.
  5. Pressure cook the quinoa, mix with the other ingredients & serve hot.
