Mix Veg Vermicelli Upma

Ingredients

  • Vermicelli – 1/3 cup
  • Carrot cut into 1 inch cubes and boiled – 2 tsp
  • Capsicum
  • Tomato
  • Cabbage  – 1/2kg
  • Onion  (medium, finely chopped) – 1/2
  • Rai – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Chana dal – 1/2 tsp
  • Curry leaves – 3 to 4
  • Green chilli finely chopped – 1
  • Red chilli paste – 1/4 tsp
  • Turmeric powder – a pinch
  • Oil – ½ tsp
  • Salt – to taste

Method

  1. Heat oil in a non-stick pan and saute.
  2. Add red chillies, mustard seeds, split black gram, split Bengal gram and sauté till mustard crackles.
  3. Add onion and green chilli and sauté for 1-2 minutes.
  4. Add carrot and other vegetables and sauté for a minute.
  5. Add red chilli paste, turmeric powder and sauté for half a minute.
  6. Add vermicelli and saute for 3-4 minutes.
  7. Add 1 cup water and salt and mix well and cook till vermicelli is cooked.
