Minty Couscous

Ingredients

  • Couscous (raw) – ¼ kg & if cooked/boiled- ¾ kg
  • Chopped tomatoes – ½ kg
  • Chopped Cabbage – ½ kg
  • Chopped spring onions -1/4 kg
  • Chopped coriander (dhania) – 1 tbsp
  • Chopped mint leaves (pudina) – 1 tbsp
  • Lemon juice – 1 tsp
  • Salt to taste

Method

  1. Mix cooked couscus, tomatoes, cabbage, spring onion, coriander and mint leaves lemon juice and salt as per taste and toss well.
  2. Refrigerate for at least 1 hour before serving so that all the flavors blend.
  3. Serve chilled.
