Mexican Sweet Corn Salad


  • Sweetcorn – 1/2k
  • Zucchini (medium) – 1
  • Capsicum (red) – 1
  • Cilantro leaves (chopped) – 1/4k

For Dressing:

  • Olive oil – 1/4tsp
  • Jalapeon (chopped) – 2 to 3 slices
  • Lemon juice – 1/2 tbsp
  • Mustard – 1/2tsp
  • Sauce
  • Salt and pepper powder as per taste

Rub zucchini, red capsicum and corn on cob with olive oil. Heat a grill to medium-high heat, then grill veggies directly on grates until zucchini and pepper are tender and corn is slightly charred. Remove from heat and dice zucchini and red capsicum. Cut corn off of cob and toss zucchini, red capsicum, corn, jalapeno and cilantro in a large bowl. Set aside.

Make the dressing:
In a small bowl, whisk all dressing ingredients until smooth. Season with salt and pepper to taste. Pour dressing over salad and toss to evenly coat. Chill salad until ready to serve. Enjoy!
