Marrakesh Veg Dish

Ingredients

  • Chickpeas/chole (raw) – 1/4 k
  • Quinoa(raw) – ½ of ¼ k
  • Onions (chopped) – ½ k
  • Brinjal (cubed) – 1/3k
  • Tomatoes (chopped) – ½ k
  • Pumpkin / bhopla (cut into pieces) – 1/3 k
  • Vegetable stock/plain water – 100 ml
  • Coriander powder – ¼ tsp
  • Cumin powder – ¼ tsp
  • Red chilli powder – ¼ tsp
  • Black pepper powder – ¼  tsp
  • Cinnamon powder – ¼ tsp
  • Olive oil – ½ tsp
  • Salt – as per taste

Method

  1. Heat oil in a non stick pan, add onions and sauté.
  2. Add red pumpkin and brinjals to the pan add salt and mix well.
  3. Add coriander powder, cumin powder, red chilli powder, black pepper powder, cinnamon powder and mix well.
  4. Add tomatoes, 1 cup water or vegetable stock.
  5. Add cooked chickpeas and mix.
  6. When it comes to a boil, cover and cook till all vegetables are completely tender and the sauce has become thick.
  7. Boil quinoa with 1 cup water and cook it properly.
  8. Serve hot with boiled quinoa.
