Ingredients
- Uncooked pasta – 1/3 cup
- Chopped walnut – 1 tsp
- Baby corn (boiled and cut into rounds) – 2 to 3
- All color capsicum – ½ cup
- Spring onion (chopped) – 1
- Black olives (sliced) – 1 tbsp
- Zucchini & broccoli – ¼ cup
Dressing:
- Olive oil – ½ tsp
- Vinegar – ¼ tsp
- Garlic (finely chopped) – 1 clove
- Pepper powder – ¼ tsp
- Oregano – ¼ tsp
- Dry basil – ½ tsp or Freshly chopped basil – 1 tbsp
- Powdered sugar – ¼ tsp
- Juice of ¼ lemon
- Salt to taste
Method
- Boil the pasta and drain the water.
- Steam baby corn, broccoli & zucchini.
- Mix all the ingredients to make a salad.
- For the dressing, mix all the ingredients in a bottle and shake well to make a thick dressing.
- Add the dressing to the salad and mix well.
- Serve warm or cold.
