Fattoush

Ingredients

  • Green capsicum-1
  • Tomato-1
  • Cucumber-1
  • Onion – 1/4 k
  • Multigrain bread – 1 slice
  • Iceberg lettuce – few leaves
  • Black olives – 5
  • Green olives – 5
  • Fresh parsley – 2 sprigs

Dressing:

  • Olive oil – ½ tsp
  • Vinegar – ½ teaspoon
  • Lemon juice – 1 tsp
  • Salt – to taste
  • Black peppercorns
  • Crushed – 1/2 tsp Fresh parsley
  • Chopped – 1 tsp
  • Dry mint leaves – 1 tsp

Method

  1. Heat a pan, add bread pieces and toast on medium heat to make croutons.
  2. To make the dressing take olive oil in a bowl, add vinegar, lemon juice, salt, crushed peppercorns, parsley, dried mint and mix well.
  3. Tear iceberg lettuce into a bowl.
  4. Add all the vegetables.
  5. Add black and green olives, parsley and toss well.
  6. Before serving pour the dressing over, add croutons. Serve immediately.
