Ingredients
- Mixed lettuce leaves- iceberg, Roquette etc. (chopped) – ½ cup
- Mixed red, yellow and green bell peppers (chopped) – ¼ cup
- Baby corn (sliced)
- Toasted bread (croutons) – 1
- Sesame seeds – 1 tsp
- 8-10 cherry tomatoes or 1 medium tomato (chopped)
Dressing:
- Apple – ½
- Pomegranate
- Grapes
- Olive oil – ½ tsp
- Lemon juice – 1 tsp
- Pepper
- Red pepper flakes
- Dried or fresh basil – ¼ tsp
- Grated garlic (optional) – ½ tsp
- Salt to taste
Method
- Immerse the chopped lettuce leaves in ice cold water and refrigerate (to keep them crisp).
- Mix the vegetables, croutons and sesame seeds in a big bowl. Toast bread and cut it into small pieces.
- For the dressing, mix all the ingredients in a bottle and shake well to make a thick dressing.
- Add the dressing and the lettuce leaves to the bowl of vegetables just before serving.
