Edamame And Broccoli Rice

Ingredients

  • Brown rice cooked – 1/2k
  • Bell peppers diced – 1k
  • Shelled edamame cooked – 1/4 to 1/3k
  • Broccoli + French beans steamed – 1/2k
  • Lemon juice – 1 tsp, tahini – 1 tbsp(optional)
  • Apple cider vinegar/ lemon – 1 tsp
  • Jalapenos – 1 tsp
  • Olives – 1 tsp
  • Salt to taste
  • Pepper to taste
  • Oil – ½ tsp
  • Water –  2 cups

Method

  1. Heat oil in a saucepan.
  2. Add Bell peppers, blanched broccoli, French beans, cooked edamame, lime juice and salt & stir fry for 2 minutes and then add tahini.
  3. Add cooked rice, apple cider vinegar or lemon, crushed pepper, jalapenos, olives mix well.
  4. Serve hot.
