Ingredients
- Cucumber (Finely chopped) – 1
- Low-fat Curd – 1/4k
- Chopped fresh mint leaves – 1/4 cup
- Cucumber slices-2 and Few mint leaves for garnish
- Salt & pepper to taste
Method
- In a blender puree chopped cucumber, yoghurt, chopped fresh mint leaves, salt & pepper.
- Chill soup at least 2 hours.
- Stir in finely diced cucumber and chopped mint & garnish the soup with cucumber slices and mint sprigs.
