Cold Cucumber Mint Soup


  • Cucumber (Finely chopped) – 1
  • Low-fat Curd – 1/4k
  • Chopped fresh mint leaves – 1/4 cup
  • Cucumber slices-2 and Few mint leaves for garnish
  • Salt & pepper to taste


  1. In a blender puree chopped cucumber, yoghurt, chopped fresh mint leaves, salt & pepper.
  2. Chill soup at least 2 hours.
  3. Stir in finely diced cucumber and chopped mint & garnish the soup with cucumber slices and mint sprigs.
