Burrito Bowl

Ingredients

  • 1/2 of 1/4 cup  raw  rajma
  • 1 medium sized onion (finely chopped)
  • 1 large tomato (finely chopped)
  • 2-3 cloves of garlic
  • 1 tsp red chilli powder mixed with ¼  tsp roasted ajwain
  • 1 tsp oil
  • Salt to taste
  • 1 cup mixed salad: lettuce, cabbage
  • French bean
  • Capsicum (sliced)
  • 1tblspn  hot salsa

Hot Salsa

  • Chop tomato & capsicum
  • Add tomato ketchup & water
  • Add salt & chilli powder to taste

Method

Soak the beans overnight or for atleast 6 hours.
Drain the beans, rinse well and put in a cooker. Cook upto 8-10 whistles with 1½ cups of water.
Heat the oil in a pan and sauté the onions till they turn pink.
Combine the tomatoes and sauté for 3-4 minutes.
Add salt & taco seasoning. Continue to sauté for 2 more mins.
Combine the beans and cook till done.

To Serve: Put cooked beans, add hot salsa and mixed salad. Garnish with coriander.
