Barley Greek Salad

Ingredients

  • Barley (raw) – 1/4kg
  • Red cherry tomatoes halved – 1/2kg
  • Olives – 1/4kg
  • 3 coloured peppers – 1/2kg
  • Chopped fresh mint – 1 tbsp
  • Vinegar/lemon juice – 1 to 2 tsp
  • Oil – ½ tsp
  • Salt & black pepper powder as per taste

Method

  1. Combine the barley, 1 cup water & a pinch of salt, bring to a boil.
  2. Drain in a colander and let it cool after it’s almost cooked.
  3. Combine the tomatoes, olives, mint, and bell pepper in a bowl.
  4. Add the cooled barley.
  5. Whisk vinegar/lemon juice and olive oil in a separate small bowl.
  6. Season with salt and pepper.
  7. Dress the salad and toss.
  8. Serve chilled.
