Ingredients
- Barley (raw) – 1/4k
- Red cherry tomatoes halved – 1/2k
- Olives – 1/4k
- 3 coloured peppers – 1/2k
- Chopped fresh mint – 1 tbsp
- Vinegar/lemon juice – 1 to 2 tsp
- Oil – ½ tsp
- Salt & black pepper powder as per taste
Method
- Combine the barley, 1 cup water & a pinch of salt, bring to a boil.
- Drain in a colander and let it cool after it’s almost cooked.
- Combine the tomatoes, olives, mint, and bell pepper in a bowl.
- Add the cooled barley.
- Whisk vinegar/lemon juice and olive oil in a separate small bowl.
- Season with salt and pepper.
- Dress the salad and toss.
- Serve chilled.
