Ingredients
- Large Eggplant – ½
- Medium Onion – ½
- Tomato – ½
- Yogurt – ½ k
- Chilli powder – ½ tsp
- Turmeric powder – ¼ tsp
- Coriander powder – ½ tsp
- Garam masala – ½ tsp
- Salt – To taste
- Oil -½ tsp
- Ginger garlic paste – 1 tsp
- chopped green chilli (chopped) -1 & Green coriander (chopped ) – 1 tbsp
Method
- Put eggplant on flame of fire to roast.
- After the eggplant turns black and brown remove the skin.
- Mash the eggplant.
- Heat oil in a pan.
- Add finely chopped onions and fry till transparent.
- Add green chillies and ginger-garlic paste.
- Add chopped tomatoes. Stir till oil separates.
- Add chilli powder, coriander powder, turmeric, garam masala and salt.
- Stir and gradually add yoghurt.
- Add mashed egg plant and stir.
- Allow mix to simmer for 5 minutes.
- Garnish chopped coriander.
