Ingredients
- Chickpeas/chole (raw) – 1/4 k
- Quinoa(raw) – ½ of ¼ k
- Onions (chopped) – ½ k
- Brinjal (cubed) – 1/3k
- Tomatoes (chopped) – ½ k
- Pumpkin / bhopla (cut into pieces) – 1/3 k
- Vegetable stock/plain water – 100 ml
- Coriander powder – ¼ tsp
- Cumin powder – ¼ tsp
- Red chilli powder – ¼ tsp
- Black pepper powder – ¼ tsp
- Cinnamon powder – ¼ tsp
- Olive oil – ½ tsp
- Salt – as per taste
Method
- Heat oil in a non stick pan, add onions and sauté.
- Add red pumpkin and brinjals to the pan add salt and mix well.
- Add coriander powder, cumin powder, red chilli powder, black pepper powder, cinnamon powder and mix well.
- Add tomatoes, 1 cup water or vegetable stock.
- Add cooked chickpeas and mix.
- When it comes to a boil, cover and cook till all vegetables are completely tender and the sauce has become thick.
- Boil quinoa with 1 cup water and cook it properly.
- Serve hot with boiled quinoa.
