Ingredients
- Brown rice cooked – 1/2k
- Bell peppers diced – 1k
- Shelled edamame cooked – 1/4 to 1/3k
- Broccoli + French beans steamed – 1/2k
- Lemon juice – 1 tsp, tahini – 1 tbsp(optional)
- Apple cider vinegar/ lemon – 1 tsp
- Jalapenos – 1 tsp
- Olives – 1 tsp
- Salt to taste
- Pepper to taste
- Oil – ½ tsp
- Water – 2 cups
Method
- Heat oil in a saucepan.
- Add Bell peppers, blanched broccoli, French beans, cooked edamame, lime juice and salt & stir fry for 2 minutes and then add tahini.
- Add cooked rice, apple cider vinegar or lemon, crushed pepper, jalapenos, olives mix well.
- Serve hot.
