Ingredients
- ½ k mixed red, yellow and green peppers (chopped)
- ½ small cucumber (chopped)
- 1 tbsp black olives
- 30 gm baby corn and 30 gm mushrooms (sliced)
- ½ k mixed lettuce leaves (chopped into squares)
- 6-7 cherry tomatoes or 1/2 medium sized tomato (diced)
Dressing
- ½ tsp olive oil
- ½ tsp lemon juice
- ½ tsp pepper
- ½ tsp dried herb like basil/celery
- Salt
Method
- Prepare the salad dressing by combining all the ingredients and whisk for 2-3 minutes or shake well in a bottle.
- Immerse the chopped lettuce leaves in ice cold water and refrigerate (to keep them crisp).
- Mix all the remaining ingredients for the salad.
- Add the dressing & the lettuce leaves just before serving.
