Roasted Veg Soup

Ingredients

  • Tomato-1,
  • red bell pepper chopped-1/4cup,
  • french beans chopped-1/4 cup,
  • carrot chopped-1 tbsp,
  • zucchini chopped – 1tbsp,
  • cauliflower-1tbsp,
  • dudhi- ½ cup chopped,
  • celery-1 tbsp chopped,
  • garlic cloves-1-2,
  • Oil-1/4 tsp,
  • mixed herbs,
  • chilli flakes,
  • pepper powder and salt-as per taste.

Method

  1. In a baking tray, add all the chopped vegetables,
    drizzle oil, season with herbs &chilli flakes.
  2. Bake for 15-20 mins at 200’c.
  3. Blend the veggies using 1- 1/2 cups of water to a purée. And serve hot.
