Mexican Cauliflower Rice

Ingredients

  • Cauliflower Florets (stems removed and washed) – 1 cup
  • Butter – 1 tsp
  • Onion [small] (finely chopped) – 1
  • Garlic Cloves (minced) – 1 to 2
  • Green Chilli (finely chopped) – 1
  • Tomato [Medium] (finely chopped) – 1
  • diced Bell Peppers (3 colours) – ½ cup
  • Paprika – ¼ tsp
  • Basil leaves
  • Oregano
  • Salt as per taste
  • Tabasco sauce

Method

  1. Place cauliflower in a bowl. Pour over salted hot water and allow sitting for 10 minutes.
  2. Then drain the water and cool down.
  3. Add cauliflower florets to a food processor (or grate it) like rice.
  4. Make sure it doesn’t turn mushy.
  5. Heat butter in a pan; add onions, garlic and chilies.
  6. Stir fry for a few minutes.
  7. Add bell peppers, tomatoes, spices and salt.
  8. Cook for a few minutes till they soften.
  9. Add the cauliflower rice to the pan and mix well.
  10. Stir fry the cauliflower for 3-4 minutes till its tender.
  11. Serve hot.
