Baigan ka Bharta

Ingredients

  • Large Eggplant – ½
  • Medium Onion – ½
  • Tomato – ½
  • Yogurt – ½ kg
  • Chilli powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Coriander powder – ½ tsp
  • Garam masala – ½ tsp
  • Salt – To taste
  • Oil -½ tsp
  • Ginger garlic paste – 1 tsp
  • chopped green chilli (chopped) -1 & Green coriander (chopped ) – 1 tbsp

Method

  1. Put eggplant on flame of fire to roast.
  2. After the eggplant turns black and brown remove the skin.
  3. Mash the eggplant.
  4. Heat oil in a pan.
  5. Add finely chopped onions and fry till transparent.
  6. Add green chillies and ginger-garlic paste.
  7. Add chopped tomatoes. Stir till oil separates.
  8. Add chilli powder, coriander powder, turmeric, garam masala and salt.
  9. Stir and gradually add yoghurt.
  10. Add mashed egg plant and stir.
  11. Allow mix to simmer for 5 minutes.
  12. Garnish chopped coriander.
